Big Grill Festival 2023 is back in Herbert Park this August, and there are new chefs and restaurants now added to the lineup as well as timetables for the bastecamp and Brewcamp stages just announced. In a festival led by ingredients and fueled by fire, this year’s line-up is smoking with talent from all over the world and with an increased focus on niche, skilled and in-depth live demos, most of which will never have been seen in Ireland before, tickets for Big Grill Festival 2023 are in hot demand!
as always, bastecamp is the hub of the festival weekend, hosted by the best pitmasters, chefs and teachers in the business. Brewcamp then is to drink what bastecamp is to food – a haven for all things drinks-related, from demos to challenging expectations, exploring ideas in depth to traditional tastings.
This year’s Bastecamp line-up will take visitors all over the world in just one weekend, with plenty of USA barbecue influence as always. YouTube star chef Brad Leone will grill oysters and smoke lamb shanks (Sat & Sun), renowned Tennessee pitmaster Pat Martin delves into traditional whole hog barbecue with Daniel Vaughanbarbecue editor of Texas Monthly (Sat) and Vaughan will also host fellow Americans Billy Durney of Hometown Bar-B-Que NY and food writer & meat expert Nick Solares on-stage to discuss the current state of regional barbecue in the United States. A little closer to home, over from the UK for the weekend, barbecue expert Genevieve Taylor hosts masterclasses (Sat & Sun), Nick Weston of Hunter Gather Cook is back with live butchery (Sat & Sun) and food writer Melissa Thompson’s shares her Caribbean take on surf and turf (Thurs).
Travel the rest of the world through live fire and enjoy more demo debuts on the Bastecamp stage including Andy Ricker of Pok Pok fame joining Dublin Butcher Jess Kelly to deep dive into Thai sausage (Thurs), Ellie Kisombe introducing us to Southern African Malawian barbecue (Fri) and For All Things Asado, South American chef Mercedes ‘Mecha’ Solis is flying in to Dublin to join Martin Anderson and Rama Basilio on the legendary Argentinian grill (Sat).
Our home-based talent is just as strong, of course. Irish chef Trevor Moran returns from his award-winning Nashville Restaurant, Locust for a show-stopping Fire & Ice demo (Sun). Nico Reynolds from RTE’s All fired up will be giving a charcoal masterclass (Sat), the dream team of Aishling Moore (Goldie), and Gas Smith and João Carlos of Michael’s, to present fin to tail grilling, cooking fish over fire (Sun). Adding Michelin magic to proceedings, Derry based chefs Shauna & Mark Froydenlund (previously joint chef patrons of 2-Michelin starred Marcus at The Berkeley in London) will cook their Vindaloo short rib (Sun) and Jordan and Majken of Bech-Bailey serve up some smokin’ BBQ desserts (Sat).
Lots more too from knife-maker Fingal Ferguson, live fire chef John Relihan, cold smoking with Max Jones and Little Griller demos with Ben Quinn and Chris ‘Chops’ Taylor. The Bastecamp stage will then wrap up with The Big Grill All Star Sausage Sizzlea good old fashioned sausage cook-off judged by Jess Kelly and Marcus O’Laoire.
The Brewcamp stage runs in tandem with bastecamp, with just as busy and buzzing a lineup over the course of the festival’s four days. There will be daily wine tastings from Neighborhood Wine and chats with BizBevPodtastings with ‘ditch witch’ and forager Feebee Foran famous rhubarb gin (Fri) and a whiskey lovers dream – a portfolio tasting from Irish Distillers (Thurs), led by prestige whiskey ambassador and host of The Center Cut, Matthew Smith.
Some of the country’s leading mixologists will be shaking things up with Dave Mulligan of Bar 1661 showcasing the Belfast Coffee (Fri), legendary bartender Gillian Boyle (@GillyBeans) Focusing on a Tequila Story (Sat.) and Dave Cummins presenting the everlasting popularity of the Martini (Sat). A carefully curated edit of the best regional distilleries will also be taken to the stage on Saturday with Denis Dempsey and Kinsale Mead, sustainable drinks with Stillgarden Distillery and The Art of Poitin with Micíl Distillery. On Sunday Vice Coffee holds fort on the nation’s favourite, the Espresso Martini, the Fermentation Station looks at The Wonderful World of Terra Ignis and the festival ends with the high drama and excitement of The Big Bloody Cocktail Competition with mixologists from across the weekend battling it out for that coveted crown.
In addition to the existing exhilarating lineup of restaurants featuring Hawksmoor, From the Ashes Barbecue, Hang Dai, Bites by Kwanghi, Bahay, Parrilla by Baste, Happy’s, Crudo, Reyna, Reggie Does Pizza and bahai, new additions to the list announced today, include Chimac, Crankee Yankee Corn Dogs, Dublin Pizza Company, Nan Chinese, Neighborhood Restaurant in. in Naas, Pitt Bros., Saucy Cow and Scorchio Hot Dog.
