The first Winemaker Dinner Series of 2023 will see guests treated to a champagne reception followed by a delicious five-course dinner expertly paired with remarkable wines from Chateau Montelena
Wine and food connoisseurs are in for an extraordinary taste experience as WILDE at The Westbury presents its first Winemaker Dinner of the year – a special evening hosted by winemaker Bo Barrett, CEO of prestigious Napa Valley winery Chateau Montelena, and The Doyle Collection’s own Group Sommelier , Philip Dunne. This exclusive evening, in partnership with Tindal Wines, will take place on Sunday, February 19th on WILDE’s iconic 1930s-style al fresco terrace and will include exceptional wines paired with a specially curated menu prepared by Executive Chef Sandeep Singh and his team to highlight the delicious flavors within each pour.
The evening will begin with a champagne reception at 7pm, where guests will be served Charles Heidsieck Brut Réserve NV alongside a canapé of Carlingford rock oyster and ceviche. Dinner will follow at 7.30pm with a five-course pairing menu beginning with a shellfish cocktail of Dublin Bay prawns, Castletownbere crab salad and poached gambas with pickled cucumber served with Chateau Montelena Potter Valley Riesling 2019, followed by roasted halibut with potato mousseline and chardonnay. cream paired with Chateau Montelena Chardonnay 2019. Confit pork belly, soy balsamic glaze, quinoa and puy lentils and spiced apple ketchup will then be served with Chateau Montelena Zinfandel 2018. A main course of John Stone dry-aged beef fillet, three peppercorn sauce, celeriac, fine beans and bacon will then follow, alongside the Chateau Montelena Cabernet Sauvignon 2019. The dinner will finish with a selection of Irish cheeses paired with Chateau Montelena The Montelena Estate Cabernet Sauvignon 2017, followed by petits fours with tea and coffee.
